The ebro® food oil monitoring set comes with a handy sensing device with which you can determine the quality of various oil types. The measurement is performed directly in hot oil - e.g in the deep fat fryer. This helps in determining the oil temperature in ̊C and the oil quality in percent TPC (Total Polar Compounds). The PC value is a measure for thermaloxidative utilization factor of a frying oil.
